Microwave Pecan Brittle!

Beth Ramon would like to thank Shirley Boxley for her friends copy of Microwave Pecan Brittle, Which she has already slightly modified. I can attest as did some of the Board members at last weeks Board meeting this is one yummy and addictive recipe!

1 cup sugar
1/2 cup light corn syrup
1 cup pecan pieces (or any nut of your choice)
1 teaspoon butter or margarine
1 teaspoon vanilla extract
1 teaspoon baking soda
(optional chocolate or butter scotch morsels)

Combine sugar and corn syrup in 1 1/2 -quart microwave safe glass bowl, stirring well.

Microwave on HIGH 4 minutes; stir in pecans. Microwave at high until lightly brown 3-7 minutes (watch CAREFULLY as microwaves vary!)

Stir in butter and vanilla. Stir in baking soda until the mixture gets foamy.

Pour onto lightly greased (or buttered) baking sheet. While mixture is still hot, top with morsels, spread to smooth.

Cool. Crack. Enjoy! Can be stored in airtight container.
